Rice and cream cheese moved to walk-in freezer for fast cooling. Recommend having walk-in cooler and hibachi cold-hold unit serviced and temperatures reduced to ensure able to hold TCS foods at 41F and less. Installing plastic air curtains at walk-in cooler entrance may also help improve cold-holding.

    Nota del inspector (en inglés): 6-501.11; Core; Water is dripping down from the ceiling near the ice machine. PIC stated they may have a roof leak. Water also dripping down from an open pipe at the ceiling near the ice machine. Four lights are out over the cook area. PHYSICAL FACILITIES shall be maintained in good repair. Replace the burnt out lights. Repair the ceiling leaks. Find out what the open ceiling pipe goes to; does it need piping added to go to drain; or something that needs to be removed or capped off.
