Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

FOOD shall be protected from cross contamination (except when frozen in original commercial packaging) by separating raw animal FOODS during storage; preparation; holding; and display from READY-TO-EAT FOOD including other raw animal FOOD such as FISH for sushi or MOLLUSCAN SHELLFISH; or other raw READY-TO-EAT FOOD such as fruits and vegetables; and unwashed produce. The slicer was also observed with leftover food debris along the blade. Equipment food contact surfaces and utensils shall be clean to sight and touch. Nota del inspector (en inglés): 3-501.18; Priority; [Repeat] Containers of bechamel (9/3); crab dip (9/6); pizza sauce (9/5); chow chow (8/29); beef braising liquid (8/28 & 8/29) were all observed being held beyond 7 days. A few containers of TCS foods were also observed without dates or with labels that are no longer legible. Discard the food requiring date labels once time/temperature window has expired; if it is not been labeled; or if the label is incorrect. CDI- food items voluntarily discarded by PIC. **This will make the fourth time in a row that this has been mentioned**
