Gyro meat and chicken shawarma are not kept frozen- they are kept in the walk-in cooler. Must have prior health department approval for non continuous cooking. PIC agreed to cook gyro cone all the way through; slice off cooked portions that reach at least 155F; and properly cool slices in refrigeration. Alternatively; facility may slice product that has not yet reached 155F from gyro cone and immediately finish the cooking process on grill or stove to reach 155F; then properly cool in refrigeration. CDI- Gyro cone was voluntarily discarded during the inspection.
