- Hallazgo Alimentos a una temperatura insegura
Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): 3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food; Hot and Cold Holding (P); Tomatoes being held too highly above their fill line on a prep top cooler were up to 60F. Potentially hazardous food being held cold shall remain at 41F or below. Nota del inspector (en inglés): 3-501.15; Core; Repeat; Cut tomatoes and lettuce were found cooling in containers with tight plastic lids and stacked on top of each other. Food shall be cooled rapidly; in small portions; and uncovered. Best practice: Store cut tomatoes in walk in uncovered and allow air circulation to cool. Lid removed off of products to aid in cooling. CDI- lids removed for cooling. - Hallazgo Señales de roedores o insectos

Lockers or other suitable facilities shall be used for the orderly storage of EMPLOYEE clothing and other possessions. Store employee items separate from food and food items on a bottom shelf or another area.
