- Hallazgo Alimentos a una temperatura insegura
Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): 3-501.16(A)(2) Priority; The top layers of salami and roast beef holding above 41 F in the prep top portion of the cooler. Refer to temperature chart. TCS (Time/Temperature Control for Safety) foods shall maintain 41 F or less. Fill food below the fill line to ensure foods can maintain 41 F or less. CDI - Salami and a portion of the roast beef holding 42-45 F moved to the walk-in cooler to chill rapidly.
