Corrected during inspection (CDI) - the cutting boards were rewashed. Repeat. - Self-service soda machine: Observed black stain accumulation on the ice spout; and the back of soda machine pushers are stained; which need cleaning. Discussed the matter with PersonIn Charge (PIC).

Cooling shall be accomplished by placing food into shallow pans; separating foods into smaller portions; using rapid cooling equipment; loosely covered; or uncovered if protected from overhead contamination during the cooling process. CDI- foods were uncovered to facilitate heat transfer.
