Also; the edges of this wood shelf have gaps; which makes it hard to keep clean. Discussed the matter with PIC. - Observed dry clean brushes used for bread wood shelf: the brush bristles are coming off; and the material is hard to keep clean. Discussed the approved equipment use for the operation with the PIC; preventing physical contamination. - Bake goods display: observed an unsealed wooden shelf storing whole; uncut breads. PIC stated that this area of the display is dry-clean-only. Discussed with PIC that approved food-contact surfaces of equipment; including multi-use surfaces used to store bread; should be hard maple wood equivalents and non-porous; easier to clean and sanitize.

According to the PIC majority of the food items come prepared from their Cary location. Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. CDI- known dates added. 3-501.18; Priority; Several containers of TCS foods (French onion soup; roasted tomatoes; and roasted chicken) observed dated from 2/3/2025. Discard the food requiring date labels once time/temperature window has expired; if it is not been labeled; or if the label is incorrect. CDI- all food items voluntarily discarded by PIC.

Warewashing machines and the compartments/drainboards of sinks used for washing and rinsing equipment; utensils; raw food; etc. shall be cleaned before use; throughout the day to prevent recontamination of equipment and utensils; and at least every 24 hours if used. Increase cleaning frequency.
