Written procedures for Time as a Public Health Control shall be prepared in advance; maintained in the establishment; and made available for the Health Department upon request. Written TPHC procedures must specify methods of compliance with 3-501.19 (B) or (C). CDI- EHS helped PIC fill out form at end of the inspection. PIC hung up on wall near TPHC product. The chicken just placed in the walk in cooler was split into two smaller portions and placed in the freezer to cool more rapidly. Educated the PIC on cooling methods. EHS recommends using small hotel pans; no more than 2" in depth and place in freezer for rapid cooling. For larger soup portions you can utilize a cooling wand and place in the center of the product stirring every 15 mins in the walk in freezer. Cooling charts online can also be utilized; if necessary to check cooling times.
