- Hallazgo Problemas con el lavado de manos
El personal no se lavaba las manos cuando debía, o un lavamanos estaba bloqueado, sin jabón ni toallas de papel, o se usaba para otra cosa. Las manos son una de las formas más comunes en que los gérmenes llegan a la comida.

Nota del inspector (en inglés): 2-301.14; Priority; Employee was observed entering the kitchen area from outside but did not wash their hands prior to handling equipment. Wash hands before engaging in food preparation including working with exposed food; clean equipment and utensils; and unwrapped single service and single use articles. Nota del inspector (en inglés): 3-501.18; [Repeat] Several TCS food items (Cali sauce; cheese foam; roasted garlic; etc.) were observed in the reach-in cooler dated from 11/11/25; 9 days over the allowed 7 day time hold. Discard the food requiring date labels once time/temperature window has expired; if it is not been labeled; or if the label is incorrect. Nota del inspector (en inglés): 8-103.11; Priority Foundation; Facility is using a vacuum seal machine to extend the shelf life of some TCS food items in the freezer. Some dated as far back as July 2025. Provide the required information to obtain a variance to the regulatory authority. CDI- food items were voluntarily discarded by the PIC. Vacuum seal machine shall be removed from the premises.

Nota del inspector (en inglés): 3-501.18; El Sauce ( cooked onions; garlic; peppers etc.) was observed in the reach-in cooler dated from 5/6/25; 11 days over the allowed 7 day time hold. A container of mayo mixed with the same El Sauce base was also dated from 5/6/25. Discard the food requiring date labels once time/temperature window has expired; if it is not been labeled; or if the label is incorrect. Nota del inspector (en inglés): 3-501.16(A)(2); Priority; A pan of burgers in the back cooler were observed holding between 46-47F. Ambient air temperature was 42F but dropped back down to 36F within 20 minutes. Maintain TCS foods in cold holding at 41F or less. Nota del inspector (en inglés): 7-203.11; Priority; A container of quaternary ammonium sanitizer was observed being stored in a bottle previously containing a chlorine solution. Sanitizing solutions shall not be stored in or dispensed from containers previously containing other Poisonous or Toxic Materials. CDI- Education given and a bottle used quaternary ammonium solution only was used.
