Also suggested moving these item to an area where it is closer to cold air flow for rapid cooling. Corrected During Inspection - PIC placed ice wands into product to speed up cooling process.

Service was scheduled for tomorrow morning. PIC will use ice in food safe bags; or TPHC for items in this unit during dinner rush. Risk factor plan was provided to PIC via email to monitor temperatures in the reach in cooler. PIC will measure an item left in cooler each hour; and text a picture of the temperature log to EC.
