Thermometer employee is using is accurate; but slow. This may be limiting the number of pieces being checked to verify safe final cook temperature is achieved. Employee needs to monitor the final cook temperature of large pieces of chicken at cooking completion. Verify chicken has reached 165F. Large pieces of chicken were cooked longer upon request.

Thermo-label sticker added to white plate and dishes ran through machine and dish simulator measured 153F while sticker did not change color. After being cleaned in a mechanical dish machine; equipment food-contact surfaces and utensils shall be sanitized in the dish machine by achieving a utensil surface temperature of 160F as measured by a max/min thermometer. Booster for hot water turned on by manager during inspection and after allowing to heat up dish machine cycle ran again and plate simulator read 160F. Ensure to use plate simulator or other internal temperature measuring device to check hot water in dish cycle. Dishes that were ran through during inspection were gathered and run back through dish machine. 4-601.11(A); Priority foundation; A few metal and clear round containers stacked with green date sticker residue left on the containers; equipment food contact surfaces and utensils shall be clean to sight and touch. Items moved to dish area and employee removed stickers and residue before running through machine again.
