Nota del inspector (en inglés): 3-302.11(A)(1); Priority; Observed boxes of raw bacon stored above containers of pickles. Food shall be protected from cross contamination (except when frozen in original commercial packaging) by separating raw animal food during storage; preparation; holding; and display from ready-to-eat food including other raw animal food such as fish for sushi or molluscan shellfish; or other raw ready-to-eat food such as fruits and vegetables; and unwashed produce. Nota del inspector (en inglés): 4-601.11(A); Priority foundation; Observed a significant number of metal and plastic food containers with sticker pieces and sticky residue on their surfaces while stored on the clean dish shelves. Also observed several knives stored on a magnetic strip with residue on the blades. Equipment food-contact surfaces of equipment shall be clean to sight and touch. Knives were removed and placed at the dishwasher for cleaning but due to the volume of containers with debris on their surfaces they could not all be removed at this time. Remove containers and thoroughly clean to remove residue and sticker pieces from surfaces; follow-up by 7/10/2026. Repeat. - Hallazgo Alimentos a una temperatura insegura

TCS (time/temp control for safety) food in cold holding shall be maintained at 41F or less. Nota del inspector (en inglés): 3-501.15(B); Core; Observed some recently prepared foods placed in tightly-sealed containers while cooling in various coolers. When placed in cooling or cold holding equipment; food containers in which food is being cooled shall be: Arranged in the equipment to provide maximum heat transfer through the container walls; and Loosely covered; or uncovered if protected from overhead contamination as specified in the NC Food Code; during the cooling period to facilitate heat transfer from the surface of the food. The premises shall be maintained free of insects; rodents; and other pests. Address source of flies; potentially standing water or dirty floors/equipment; before the next inspection.
