Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): Observation: Multiple cold hold foods on the salad bar were not being maintained at 41F or below. Nota del inspector (en inglés): Observation: Tomatoes in the low boy cooler had a use by date of 9/11/26 and were still stored in the lowboy. Roast beef in the walk in cooler was prepared on 9/16 and was labeled with at displosal date of 9/26. Most ready to eat foods on ly have a 7 day limit. 3-501.17(A)(B)(D) Ready-to-eat TCS food; date marking - Pf Except for shellstock; refrigerated; READY-TO-EAT; TCS FOOD prepared in house or opened from a commercial container (except deli salads; hard cheeses; cultured dairy; preserved fish; and cured/fermented meats) and held for more than 24 hours shall be clearly identified using a date marking system to indicate the day by which the FOOD shall be served or discarded for a maximum of 7 days.
