About 1 inch of product remaining in container; sauce rings/residue from a high level present in the top of the bucket. Label on container during inspection shows it was printed at 10:55 AM 2/25 and to discard at 2/28. PIC states that the sauce began being used last night at 8:30 PM. Variance for sauce allows for 24 hr use of the product once removed from the fridge. Discussed with PIC the importance of being able to monitor/track the 24 hours. Time written/corrected on container. CDI
