Cut melon was cooling in large; closed containers. Cooling had been initiated shortly before inspection. Quickly cool TCS foods using methods such as open/vented shallow pans; smaller portions; large ice baths and active stirring. Ice wands work well for soups. Cold air must flow around product to remove the heat. CDI- chicken soup was moved to the walk-in freezer and ice wands were placed in soup to initiate faster cooling. Melon was placed in freezer to flash cool from recent prep.
