Manager rearranged storage hierarchy. 3-304.15 (A); Priority;Observed team member handle raw salmon with gloved hands then changed tasks to open walk in cooler doors several times. The same soiled gloves were also used grab produce and prepare raw peppers for baking. If used; single use gloves shall be used for only one task such as working with raw ready-to-eat food or with raw animal food; used for no other purpose; and discarded when damaged or soiled; or when interruptions occur in the operation. Manager provided training; team member removed gloves and re-washed hands.

Based on observations and discussion with PIC; it was determined that food items were adjusting to the ambient temperature of the buffet style salad bar. EHS recommends placing entire salad bar on TPHC due salad bar only being used for 2.5hrs and establishment already has a TPHC SOP in place for green bar. ***CORRECTED DURING INSPECTION (CDI)***
