P - Observed cooked chicken wings cooling in a large; deep pan in a large portion. Over 40 minutes; the temperature dropped from 78F to 72F; the cooling rate was 0.15F per minute; which is too slow to bring the wings to 70F within 2 hours. CDI - transfer the cooked wings to a smaller; shallow pan and continue cooling in the walk-in cooler. Because the cooling time is within 2 hours of the cooling process; no point at this time. See line 33.

Discussed time as a public health control with PIC.

    Nota del inspector (en inglés): 3-501.16 (A) (2) and (B) Time / Temperature Control for Safety (TCS) Food; Hot and Cold Holding (P) (A)(2) Maintain TCS foods in cold holding at 41F or less. -P - Observed prep top cooler with TCS food (chopped tomato salsa; spring mix; red salsa) temperature above 41F. The operation went through the rush lunch; and the prep cooler unit's temperature rose during the previous hour. CDI - the prep cooler is closed to cool down the food. Rechecked 30 minutes later; the TCS food involved at 41°F. - Observed in-house prepared lard (pork and beef fat; 65F produced 4/28/26) stored on the shelf with no temperature control. Because the lard had been stored on the shelf for more than 4 hours; it was discarded. First observation: no point at this time.
