Reach in cooler at expo line where salsa is stored was registering at 43-45 F. Temperature control for safety foods shall be maintained at 41 F or less. Corrected During Inspection - Inspector discussed utilizing 4 hour Time as a Public Health Control for salsas during busy hours of operation and provided paper work. All salsa was moved into reach in cooler as; per PIC; these items were not out for more than an hour. Salsa inside reach in cooler was immediately transferred into walk in cooler until further notice as unit was in defrost due to ice build up inside.

Food shall be protected from contamination by storing the food in a clean; dry location; where it is not exposed to contamination; and at least 6 inches above the floor. CDI - Crab legs moved to prep area by PIC. Half credit taken; only one food item found stored on the floor.

    Nota del inspector (en inglés): 3-304.14; Core; Couple of wiping cloth buckets had chlorine sanitizer below 50 PPM. Cloths in-use for wiping counters and other equipment surfaces shall be held between uses at 200-400 PPM for quaternary ammonia; 50-200 PPM for chlorine solutions; and in accordance with manufacturer's label use instructions. CDI - Sanitizer was replaced in each bucket.

There is ice accumulation on the condenser in the walk-in freezer. Equipment shall be maintained in a state of good repair. Replace/repair broken/damaged/missing items. Next time full credit will be taken.
