In the prep cooler; observed carton of raw shelled eggs stored above pre-cooked meatballs. Noted ambient are dropped from 40 to 38 during time of inspection. Also observed some sticky residue build up along the front walk-in cooler door surface. Create a master cleaning schedule for staff to adhere to.
