Ensure prep cooler and walk-in cooler doors remain closed. PIC called a repair technician to verify that the walk-in cooler is functioning properly.

    Nota del inspector (en inglés): 4-501.114 Maintain sanitizer at correct concentrations when being used to sanitize (P) Quaternary ammonia sanitizer in 3-comp sink had a concentration of 0ppm. Chlorine sanitizer in dish machine had a concentration of 0 PPM. Chlorine sanitizer shall have a concentration of 50-200 PPM. Quaternary ammonia sanitizing solution shall have a concentration of 200-400 PPM or according to manufacturer's instructions. CDI: Quaternary ammonia sanitizing solution was manually added to sanitizing basin by PIC and tested to be 200 PPM. PIC stated that dish machine will not be used until repairs are complete.

Lamb was prepared in prep sink after raw chicken without a cleaning and sanitizing step. Food shall be protected from cross contamination by separating raw meats from ready to eat foods and according to final cook temperatures. CDI: Foods were rearranged. Prep sink was cleaned and EHS recommended preparing lamb before chicken at prep sink.
