Ensure mop water being dumped in the curbed service sink out front; not out the back door. Hang mops to dry after use; floppy mop head side down; so draining into service sink drain. As an alternative; hang mop head over the front of the squeezer of the emptied mop bucket so mop head hanging as freely as possible to dry; draining into the bucket. Another alternative would be to use disposable mop heads. 6-501.12 Cleaning; Frequency and Restrictions (C)- Noted an accumulation of dust along the ceiling tiles and HVAC unit above the main prep kitchen/ cook line station. Increase frequency of cleaning in noted area.

Also noted the sliding doors were left open on the garbage dumpster. Keep dumpster lids closed in between use to minimize the risk of pest entry.
