Cold air must flow around product to remove the heat. -Pf - Observed a big deep pan of cooked rice is cooling in the walk-in cooler with a temperature of 135°F after 1 hour of cooling time. Discussed with the person in charge (PIC); the cooked food needs to cool in smaller portions and in a shallow pan. Corrected during inspection (CDI): transfer cooked rice to smaller; shallower pans and continue cooling in the walk-in freezer. .
