There was no change in temperature after 20 minutes. Cooling shall be accomplished by placing food in shallow pans; portioning into thin or small amounts; using rapid cooling equipment... CDI -PIC instructed employee to put lo mein in the walk-in cooler when he saw inspector taking second temperature.
