El personal no se lavaba las manos cuando debía, o un lavamanos estaba bloqueado, sin jabón ni toallas de papel, o se usaba para otra cosa. Las manos son una de las formas más comunes en que los gérmenes llegan a la comida.

Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food; clean equipment and utensils; and unwrapped single-service and single-use articles and: After touching bare human body parts other than clean hands and clean; exposed portions of arms; After using the toilet room; After caring for or handling service animals or aquatic animals; Except after drinking from a closed beverage container in a manner that prevents contamination; after coughing; sneezing; using a handkerchief or disposable tissue; using tobacco; eating; or drinking; After handling soiled equipment or utensils; During food preparation; as often as necessary to remove soil and contamination and to prevent cross contamination when changing tasks; When switching between working with raw food and working with ready-to-eat food; Before donning gloves for working with food; and After engaging in other activities that contaminate the hands. Nota del inspector (en inglés): 4-501.114; Priority; When tested during the inspection; the concentration of the chlorine sanitizing solution in the dish machine was at 10ppm; which is below the minimum required for sanitizing. A chemical sanitizer used in a sanitizing solution for a manual/mechanical operation shall be used in accordance with the EPA-registered label use instructions; and shall be used as follows: A chlorine solution shall have a minimum concentration of 50ppm not to exceed 200ppm. PIC contacted dishwasher technician to repair unit; scheduled for 5/28/2026. Until unit is fixed; establishment must use the 3-compartment sink. Nota del inspector (en inglés): 3-501.16 (A)(2) and (B); Priority; Observed a few foods holding a couple degrees above 41F and a container of raw beef holding at 46F; see temperature table. TCS (time/temp control for safety) food in cold holding shall be maintained at 41F or less. CDI - Ice bags added to raw beef and lids closed on prep coolers to assist with cooling.
