- Hallazgo Problemas con el lavado de manos
El personal no se lavaba las manos cuando debía, o un lavamanos estaba bloqueado, sin jabón ni toallas de papel, o se usaba para otra cosa. Las manos son una de las formas más comunes en que los gérmenes llegan a la comida.

Los platos, equipos o superficies que tocan los alimentos no se lavaban, enjuagaban y desinfectaban correctamente, o el desinfectante no tenía la concentración adecuada. Las superficies limpias ayudan a evitar que los gérmenes lleguen a la comida.

Nota del inspector (en inglés): 4-702.11; Priority; Large clear containers that previously held pizza dough observed being rinsed out after cleaning but not sanitized before being stored. Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): 3-501.14(A); Priority; A large container of sausage cooked yesterday afternoon was holding around 50F in the center. Quickly cool cooked foods within 2 hours from 135F to 70F; and within a total of 6 hours from 135F to 41F. Nota del inspector (en inglés): 3-501.18; Priority; Caesar dressing stored in the prep cooler was dated from 5/12/26. A few containers of sausage and salads prepared yesterday was observed without dates. Discard the food requiring date labels once time/temperature window has expired; if it is not been labeled; or if the label is incorrect. Nota del inspector (en inglés): 3-501.15; Priority Foundation; Ground sausage cooling in thick portions since yesterday was holding at 50F. Quickly cool foods. Use methods such as open/vented shallow pans; large ice baths and active stirring. Cold air must flow around product to remove the heat. Nota del inspector (en inglés): 4-903.11 (A); Cutting boards were observed being stored inside the splash zone of the handwashing sink. Store cleaned equipment; utensils; linens in a clean; dry location; where they are not exposed to splash; dust; or other contamination; and at least 6 inches above the floor. Store cutting boards in a different area to prevent contamination.
