Nota del inspector (en inglés): 4-501.114 Manual and Mechanical Warewashing Equipment; Chemical Sanitization - Temperature; pH; Concentration and Hardness (P); Chlorine based dishwashing machine was not producing chlorine at a traceable concentration. If chlorine is used to sanitized food contact surfaces; the chlorine shall be maintained at 50-200ppm. CDI- 24 hour service company was contacted for repair and dishes are being taken to the 3 compartment sink to be sanitized in the meantime.
