Discard the food requiring date labels once time/temperature window has expired; if it is not been labeled; or if the label is incorrect. CDI- kimchi was voluntarily discarded. Education was also given (see item # 32). 3-501.17; Priority Foundation; Cooked sweet potatoes from yesterday was observed without a date. Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. CDI- known dates added.

    Nota del inspector (en inglés): 8-103.11; Priority Foundation; Kimchi is being kept longer than 7 days. The PIC stated that the process includes adding salt and other spices to cut cabbage and being held under refrigeration for 5 days prior to it being used and kept long term. Provide the required information to obtain a variance to the regulatory authority. CDI- education was given and PIC was informed to stop this process until a variance is provided by the state.

CDI- education was given and the scallop shells were voluntarily discarded by the PIC.
