    Nota del inspector (en inglés): 2-301.14 When to Wash (P) Two utensils were accidentally dropped on the ground during cooking and inspector observed employee pick the utensils up with gloved hands and proceeded back to food preparation without removing gloves and washing hands. Employee observed breading raw food products at the fryer; change gloves; then proceeded to handle and plate ready to eat foods. Hands shall be washed after handling soiled equipment or utensils as well as when switching between working with raw food and working with Ready to Eat Food. Corrected During Inspection - Inspector immediately made PIC aware of these incidents who then advised employees to wash hands.

Raw shrimp; raw beef; and raw pork observed inside same make unit between 42-44 F. Pad thai sauce (includes coconut milk) at cook line observed at 45 F. Temperature control for safety foods shall be maintained at 41 F or less. Corrected During Inspection - Per PIC; these items had recently been moved from the walk in cooler to the prep line within the last hour. Facility's intention was to utilize Time as a Public Health for these items; but some items did not bear a time stamp; while the others stated 11:30am as the time indication; which; at the time the temperature was taken; has not yet reached 11:30am. Inspector also advised PIC to lower the temperature of make unit by a few degrees to ensure it is maintaining 41 F at all times. All other items were placed on ice to cool back to 41 F quickly.

    Nota del inspector (en inglés): 3-501.14(A) Cooling. -P Facility attempted to cool down two large containers of white rice from the night before; yet the temperature of these products range from 70-80 F; which did not achieve the temperature requirement of 41 F within a total of 6 hours of cooling. Cooked noodles inside walk in cooler were also observed between 42-45 F; all of which were cooked yesterday and cooled overnight. Quickly cool cooked foods within 2 hours from 135F to 70F; and within a total of 6 hours from 135F to 41F. Corrected During Inspection - PIC stated that rice is left inside warmer insert and placed into walk in cooler at night. PIC stated these leftovers are used to make fried rice. One container was observed inside electric rice warmer at 80 F; while the second was observed inside rice warmer at 70 F. Inspector discussed proper cooling methods and utilizing containers that facilitate heat transfer rather than keeping rice inside incubated container that will retain the heat. Discussed proper cooling methods and time requirements. PIC voluntarily discarded both containers of rice at the time of inspection. Inspector also discussed the need to lessen the amount of noodles stacked on top of one another inside container during the cooling process or utilize shallow container; as it is not allowing adequate air flow to the product for rapid cooling.

Inspector suggested moving products into walk in cooler to rapidly cool back down to 41 F or less.
