Quaternary ammonia sanitizing solution shall have a concentration of 200-400 PPM or according to manufacturer's instructions. CDI: Sanitizing solution was remade and tested to be 200 PPM. Unit must be capable of maintaining food temperatures at 41F or below before resuming use of cooler. Walk-in cooler ambient temperature was unable to be verified by REHS due to usage by staff. Facility PIC stated that a repair technician would arrive in the evening to verify that the unit is functioning properly. Sauce cooler was kept closed and verified to be 38F by REHS. Raita was voluntarily discarded by PIC. Ensure that employees do not keep doors open for prolonged periods of time and that door is fully sealed when shut. Keep doors shut to allow for food to cool to 41F.
