Store tags in chronological order for 90 days. -Pf - The mussel shellstock tag was not stored in chronological order. Corrected during inspection (CDI) - the tag rearrange in order.

CDI - the dishwasher was reprimed and rechecked with chlorine at 100 ppm.

Cold air must flow around product to remove the heat. -Pf - Observed the cooked lamp(190 F; within 30 minutes) cooled in a deep; large pot; large portions that does not facilitate cooling steps. CDI - the lamp was transferred to a smaller; shallow pan and continued to cool in the ice tub. .
