Food shall have an initial temperature of 41 F when removed from cold holding temperature control or 135 F or greater when removed from hot holding temperature control. -P - Observed cooked white noodle(56F); peeled lettuce(60F); mung beans( 40F); and beef broth(135F) staging on the service line with no means of maintaining food temperature outside of the temperature danger zone(41F-135F). The PIC stated that the food was staged for lunch hour from 11 am to 3 pm; and that what was left was discarded at 3 pm.
