- Hallazgo Alimentos a una temperatura insegura
Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

In the top section of prep unit; cut tomato overstacked in pan at 43F; and cooked egg made this morning at 44F. In the right prep unit; coleslaw in separate plastic container in open air section in top area of prep unit holding at 42.4F. To-go containers of house-made ranch (buttermilk) overstacked in pan holding on low ice at 64F; and housemade blue cheese dressing at 63F. Maintain cold Temperature Control for Safety (TCS) foods at 41F and less. CDI- TCS foods over 41F voluntarily discarded during inspection by PIC. Do not overstack TCS foods in top section of prep unit. Ensure TCS foods at 41F and less before moving to top section of prep unit. When placing TCS foods on ice; ensure ice is all the way around the container and up to the level of the food; and for the little to-go containers; do not overstack the pan and place a lid on the pan.
