See above food temperature chart for registered temperatures. Foods were taken to walk in cooler at 37F. PIC stated that meats were above 41F due to the top of the make line being open during lunch. Commercial refrigeration must be able to maintain proper temperature even during peak times. Deli meats are stored as chubs and are not in individual pans with lids which is recommended. CDI.
