Verify foods reach the proper final cook or reheat temperatures before placing in hot-holding. CDI- Hot box foods moved to the ovens for fast reheat; and correct final reheat temperatures verified. Off-temperature chunk potatoes on the front line voluntarily discarded by PIC during inspection. Recommend using the ovens for reheat before placing in hot-box to then hold hot temperatures. Recommend using individual pan lids on chunky products like stacks of cheese slices in prep unit; and chunk potatoes at the hot line.
