Prepared TCS food shall be discarded if it exceeds the temperature and time combination as specified in Food Code (up to 7 days when maintained at 41F and less). CDI- PIC found staff had refilled machine recently with fresh water; and after running several more cycles machine got up to required temp; remeasured at 161.3F. Dishes rewashed. PIC instructed staff to run machine several cycles after a water refill and to use the temperature disk to verify at least 160F reached before starting with dishes. Recommend better booster system.
