P - Observed a food handler with gloves go from the order registered monitor to handle food (with serving utensils); then check food temperature; then change gloves without washing hands before donning new gloves; between changing tasks. Corrected during inspection (CDI) - educational provided. The employee washed their hands before donning new gloves. Since no product is involved; no point at this time.

The prep top cooler unit was found open for a period of time during pizza making. Discussed the matter with PIC. CDI - pizza prep top cooler with top lid closed to allow the food to cool down. Discussed with PIC that the TCS food shall be maintained at 41F or below.

    Nota del inspector (en inglés): 3-501.14 (B); Priority; Pizza sauce stored at ambient temperatures prior to being opened was holding at 53F in the flip top pizza cooler. An employee stated that the pizza sauce had been opened and in the cooler since around 7am. TCS foods shall be cooled within 4 hours to 41F or less if prepared from ingredients at ambient temperature. CDI- pizza sauce was voluntarily discarded by PIC and a new pizza sauce was opened.

    Nota del inspector (en inglés): 3-501.16(A)(2); Priority; Salads in the grab-n-go cooler was holding between 48-49F. After conversation with the PIC the salads were stacked too high in the display case. A can of whipped cream sitting out on the countertop was holding at 75F. Maintain TCS foods in cold holding at 41F or less. CDI- the top layer of salads were removed and placed in the walk-in cooler to cool rapidly. The can of whipped cream was voluntarily discarded.
