PIC cleaned and was advised to clean meat processor every 4 hours according to meat department temperature and before storing. ***CORRECTED DURING INPSPECTION (CDI)*** 4-501.114 Manual and Mechanical Warewashing Equipment; Chemical Sanitization - Temperature; pH; Concentration and Hardness (P) The chemical sanitizer dispenser at the three compart sink and canwash/service sink does not dispense sanitizer. Maintain sanitizer at correct concentrations when being used to sanitize. The PIC is advised to use chlorinated bleach to sanitize meat market until chemical sanitizer dispenser is repaired. Establishment has chlorine bleach available. ***CDI***
