CDI - the cooked garlic sauce; place back in the cooler unit; and only leave a smaller portion on the cook line. The leftover sauce on the line will be discarded at the end of the 2:30 PM shift; and this item will be added to the TPHC form. - Sushi rice under TPHC with no discard time present.
