Los alimentos venían de una fuente no aprobada, les faltaban fechas o etiquetas obligatorias, o ya habían pasado su fecha límite de uso. Saber de dónde vienen los alimentos y qué tan viejos son ayuda a prevenir enfermedades.

Nota del inspector (en inglés): 3-203.12; Priority Foundation; Open batch of shellstock was missing the tag in the walk-in cooler (tag was already with completed tags in filing system). Shellstock in walk-in freezer used for soup was missing shellstock tag. Shellstock tags or labels shall remain attached to the container in which the shellstock are received until the container is empty. Food product level was no longer in contact with ice. Maintain TCS foods in cold holding at 41F or less. CDI-Top portions were removed and taken to refrigeration to rapidly cool. Nota del inspector (en inglés): 3-501.13 ; Core; Observed already thawed grouper in original ROP packaging in prep sink. Reduced oxygen packaged fish that is to be kept frozen until time of use shall be removed from the reduced oxygen environment prior to its thawing under refrigeration. Ensure these packages are cut open to introduce air prior to thawing or remove fish from packaging entirely. CDI- All packages were opened during the inspection.
