The ice cream machine has frozen over along the coils. The milk base in the bottom of the ice cream machine cabinet was 50F . The PIC stated that the cold cabinet had been turned off recently by mistake. Shredded lettuce and shredded cheese all on ice were holding above 41F (see temperature chart). All dairy items and TCS foods above 41F were voluntarily discarded by PIC. Follow up will be made next week to check on the ice cream machine.

The ice cream machine is still broken and set up for service. The milk base was 45-54F and had started to curdle. Diced tomatoes and sliced cheese and shredded cheese all on ice were holding above 41F (see temperature chart). All dairy items and TCS foods above 41F were voluntarily discarded by PIC. Verification Required- EHS will return on Monday; July 22; 2024 to verify that the ice cream machine has been repaired and properly maintaining the milk base at 41F or less. No ice cream shall be sold until the unit has been fixed. No TCS food items shall be held in toppings cooler until it has been repaired as well.
