Nota del inspector (en inglés): 3-501.16 (A)(2) and (B); Priority; Cold-Holding: In left prep unit; pan of cheese slices in thick plastic uncovered pan holding at 43.4F; and sliced ham at 42.5F. Maintain cold Temperature Control for Safety (TCS) foods at 41F and less. CDI- TCS foods exceeding 41F voluntarily discarded by PIC during inspection. In top section of prep units; keep TCS products below fill-line level of the pan; and use metal pans when possible to improve cold-holding. Nota del inspector (en inglés): 3-501.18; Priority; Disposition: In front coffee station cooler; Date-marking missing on opened carton of half-half and jug of milk. When asked; PIC said the milk was opened yesterday and the half-half opened 2 days ago. Refrigerated; READY-TO-EAT; POTENTIALLY HAZARDOUS FOOD (TIME/TEMPERATURE CONTROL FOR SAFETY FOOD) prepared and held in a FOOD ESTABLISHMENT for more than 24 hours shall be date-marked. The day of preparation shall be counted as Day 1 (ex.-date the milk opened; date the meat/vegetable cooked). Add date mark to prepared TCS foods that will be held over to the next day. Prepared TCS food shall be discarded if it exceeds the temperature and time combination as specified in Food Code (up to 7 days when maintained at 41F and less). Nota del inspector (en inglés): 3-501.15; Priority Foundation; Cooling Methods: Three large thick plastic pans of TCS foods prepared today being held on very low ice holding at 48F-56F. When asked; PIC said these were made from ambient canned about 3 hours ago. Cooling shall be accomplished in accordance with the time and temperature criteria specified in Food Code by using one or more of the following methods based on the type of FOOD being cooled: Placing the food in SHALLOW PANS; Separating the food into smaller or thinner portions; Using rapid cooling equipment; Stirring the food in a container placed in an ice water bath; Using containers that facilitate heat transfer (metal); Adding ice as an ingredient; or Other effective methods. Food containers in which food is being cooled shall be: Arranged to provide maximum heat transfer through the container walls; and Loosely covered; or uncovered IF protected from overhead contamination (ex.- on speed rack with top cover pan). CDI- Products moved to smaller metal pans and placed in lower section of prep unit for active cooling. When using ice bath method; maintain ice all the way around the food pan and up to the level of the food. When cooling batches of hot foods; they can stay out on counter until cool down to 135F before starting active cooling methods (recommend using small digital timer to remember to come back and check cooling temperatures); then use ice bath to get products cooler; closer to 41F before placing them in the packed tall cooler. Recommend having the tall unit and left prep unit serviced and temperature reduced to improve cooling and cold-holding. - Hallazgo Problemas con equipos o utensilios
