PIC stated that equipment is being washed in the food preparation sink in the meat market; rather than the 3-compartment sink in the cafe area. Both departments share one food service permit and all equipment must be washed; rinsed; and sanitized in the 3-compartment sink in the cafe area. CDI: Knives sent to 3-compartment sink to be further cleaned. Equipment from meat market were sent to 3-compartment sink in cafe area to be recleaned.

PIC stated that these times indicate when the prepared food items are generally prepared. REHS explained time as a public health control requirements; explaining that the time labels must be accurate to the time that the food was removed from temperature control. When using time a public health control; the food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. CDI: Labels were updated to reflect the correct time of temperature removal.

REHS explained handwashing requirements and procedures to PIC. Review handwashing procedures with all staff to ensure that hands are washed appropriately.
