Nota del inspector (en inglés): 3-501.15; Priority Foundation; Cooling Methods: Out on a speed rack in kitchen on top of pan of ice; pork and veggies holding at 105-118F after 3 hours. Cooling log in place but lacking critical data points to determine when the product reached 135F. For this product recommend shallower pan for more consistent temperatures. Recommend using 30-minute checks at start of cooling process for more complete data on cooling logs; until product cools to around 135F when active cooling methods should be started. Also on the rack; gumbo at 67F and sofrito cooked veggies at 70F. In the walk-in cooler; large thick plastic tightly covered container of farro that had hot cooked sauce mixture added today at 70F. In top section of prep unit; bundles of short ribs overstacked in pan with no lid at 48-52F. When asked; PIC said these were bundled recently. Place bundled items back in walk-in cooler on sheet pan to cool back down after the handling; before placing in container and up to prep station. Cooling shall be accomplished in accordance with the time and temperature criteria specified in Food Code by using one or more of the following methods based on the type of FOOD being cooled: Placing the FOOD in shallow pans; Separating the FOOD into smaller or thinner portions; Using rapid cooling EQUIPMENT; Stirring the FOOD in a container placed in an ice water bath; Using containers that facilitate heat transfer (metal); Adding ice as an ingredient; or Other effective methods. When placed in cooling or cold holding EQUIPMENT; FOOD containers in which FOOD is being cooled shall be: Arranged in the EQUIPMENT to provide maximum heat transfer through the container walls; and Loosely covered; or uncovered IF protected from overhead contamination (ex.- on speed rack with top cover pan). CDI- Pork voluntarily discarded by PIC during inspection. Gumbo and sofrito vegetables moved to walk-in cooler for faster cooling.
