Observation: Oven not functioning being stored in rear of kitchen; Repair; replace or remove any equipment that is not being used. 6-501.114 Maintaining Premises; Unnecessary Items and Litter (C) Discard items and litter stored on the premises as they are not necessary to operation and maintenance. Observation: Ceiling areas; wall areas in kitchen are accumulated with debris; Clean these areas frequently to prevent build up. 6-501.12 Cleaning; Frequency and Restrictions (C) Floors; walls; ceilings including the attachments such as soap; towel dispensers; light fixtures; and heat/ac vent covers shall be clean. Caution should be used to minimize food exposure.
