Quickly cool cooked foods within 2 hours from 135F to 70F; and within a total of 6 hours from 135F to 41F. CDI- sweet potatoes were voluntarily discarded and peppercorn sauce was broken down into shallow portions and placed on ice to rapidly cool for the remaining 20 mins of cooling time left.
