CDI- EHS educated the PIC about proper cooling methods; cooling in areas that are not opened frequently; and cooling in non-covered containers. The fish was uncovered and moved to the walk in freezer and was at 41F at end of inspection. Repeat. Full points.

Observation: The hand sink at the front service line did not have paper towels accessible for drying hands. Paper towels were stored on the opposite end of prep line on shelf; not dispensed properly or within reach. Operator to consider using ziploc bags in place of reduce oxygen.
