Containers of water used for storing in-use utensils must be maintained at a temperature of at least 135 F and cleaned at least every 24 hours or when container has accumulated soil or residue. CDI- Water was replaced with water that temped at 160F.

PIC stated that this unit was serviced by a technician last Thursday (6 days ago) to repair the drip. PIC was directed to remove the food from the containers that have collected ice and to place them in clean containers with lids. Monitor this unit and if ice buildup persists; contact refrigeration specialist and request they return for repairs.
