Paper towels or plastic wrap were used to cover foods.

After door remined closed for about 10 minutes; the ambient dropped about 2 degrees. Recommended to not go in and out of cooler as frequently. After keeping door closed for 30-40 minutes ambient air from vents at 33-34F; and food items at 42-41F. Full points taken for repeat violation. Do not prop door open. EHS also recommends keeping a temperature log of the cooler and checking temperatures regularly.

Food shall be protected from contamination by storing the food in a clean; dry location where it is not exposed to splash; dust or other contamination and at least 6 inches above the floor.
