Nota del inspector (en inglés): 3-501.16 (A) (1) Time / Temperature Control for Safety (TCS) Food; Hot and Cold Holding (Priority); Chicken and beef in the steam table were holding 115F. Hold TCS foods hot at 135F or above. CDI-Foods were reheated to 165F. More water was added to unit to help it hold temperature.
