El personal no se lavaba las manos cuando debía, o un lavamanos estaba bloqueado, sin jabón ni toallas de papel, o se usaba para otra cosa. Las manos son una de las formas más comunes en que los gérmenes llegan a la comida.

Nota del inspector (en inglés): 3-304.15(A); Priority; Observed a food employee handling raw; frozen chicken for chicken philly cheesesteak; then attempting to handle cooked falafel without changing their gloves. Also observed a food employee cleaning dirty gloves with a sanitized wiping cloth instead of discarding. If used; single-use gloves shall be used for only one task such as working with ready-to-eat food or with raw animal food; used for no other purpose; and discarded when damaged or soiled; or when interruptions occur in the operation. Nota del inspector (en inglés): 4-501.114; Priority; When testing the multi-quat sanitizer solution in the 3-compartment sink the concentration was less than 150ppm; the minimum required per manufacturer's label. A chemical sanitizer used in a sanitizing solution for a manual or mechanical operation shall be used in accordance with the EPA-registered label use instructions; and shall be used as follows: A quaternary ammonium compound solution shall have a concentration of a minimum 150ppm not to exceed 400ppm; as indicated by the manufacturer's use directions included in the labeling. TCS (time/temp control for safety) foods in cold holding shall be maintained at 41F or less. CDI - Lids were closed on the prep cooler and ice bags were added to cool foods on the salad line. Repeat.
